Easy and Delicious Side dish!
Ingredients
1 (32 ounce) package frozen potato rounds
1 (16 ounce) container sour cream
1 cup shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French-fried onions
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Arrange tater tots in the prepared baking dish.
In a mixing bowl, combine sour cream, cheese, and mushroom soup. Pour this mixture over the tater tots. Sprinkle onions over the top of the casserole.
Bake in the 350 degrees F (175 degrees C) oven for 45 to 60 minutes.

Hot Pizza Dip
Ingredients
6 ounces light cream cheese
1/2 cup light sour cream
1 teaspoon oregano
1/2 cup pizza sauce
1 cup low-moisture, part-skim Mozzarella cheese, shredded
1/4 cup diced red pepper
1/4 cup sliced green onion
1/2 cup Parmesan cheese, grated
whole wheat bread sticks or crackers
Directions
Combine cream cheese, sour cream and oregano in bowl; stir until smooth. Spread evenly into 9-inch pie plate or quiche pan. Top with pizza sauce, shredded cheese, peppers and onions.
Bake at 350 degrees Fahrenheit for 10 minutes, or until cheese is melted. Serve with whole wheat breadsticks or crackers

Ramen Noodle Cole Slaw
This is a very tasty & tangy recipe.
Dressing Ingredients
1 cup oil
1/2 cup sugar
1/3 white vinegar
2 packs beef ramen noodle seasoning
Cole Slaw Ingredients
1 lb. cole slaw mix
2 pks beef ramen noodles
1 cup salted sunflower kernels
1 cup slivered almonds
Directions
Prepare the dressing a day in advance and put in fridge. The next day, break up ramen noodles and mix all ingredients together. Mix well and refrigerate for a couple hours.

Lindsay's green chili
GREEN CHILI
Pork Roast
4 cans chicken broth
1 can of tomato sauce
1 tsp rosemary
1 tbsp Italian seasoning
2 tsp oregano
1 tsp garlic
1 tsp salt
½ tsp pepper
Chopped onions
4 cans diced green chilies
Serrano pepper seeds to taste
Cook pork tenderloin in Italian dressing until done then shred meat and add, then add 4 cans chicken broth
Water to desired amount
Add all ingredients except jalapenos
Cook for 1 hr
To make thick mix corn starch with water to make a runny paste, add to boiling chili.
Add pepper seeds to taste and simmer for 15 minutes.

Homemade Doughnuts
Doughnuts (Grandma Mary Lous)
2 pkgs yeast ¾ cup sugar
¾ cup water ¾ cup crisco
¾ cup milk
Flour to make soft dough (2 to 2 ½ cups)
3eggs
1 tsp salt
1 tsp nutmeg
1 tsp vanilla
Dissolve yeast in warm water. Let set about 10 minutes. Scald milk and crisco together.
Cool to luke warm. Then add flour to make sponge. Let set until light, about ½ hour. Add eggs, sugar, salt, nutmeg and vanilla and rest of flour (3 to 3 ½ cups) to make a soft dough that can be handled easily. Let rise until double in bulk (approx. 1 hr). Roll & cut out. Let rise again until very light. Fry in hot grease (350 to 375 degrees). Dip in Icing or roll in sugar or powder sugar.

Pork Chops with Mushroom Bourbon Cream Sauce
Ingredients
2 Tbsp olive oil
1 pound sliced button or cremini mushrooms
1/4 cup chopped onions
2 large garlic cloves, chopped
1/2 cup dry white wine (e.g. Sauvignon Blanc)
1 cup chicken stock
1/2 cup heavy cream
1/4 cup bourbon whisky
Salt and pepper
1 large egg
2 Tbsp water
4 6-7 oz center-cut pork chops
All purpose flour
2 cups fresh bread crumbs
3 Tbsp olive oil or grapeseed oil
2 Tbsp minced fresh basil
1 Sauté onions, garlic, and mushrooms in 2 Tbsp of olive oil in a large skillet on medium high heat until the mushrooms are browned - about 10-15 minutes. Add the wine, increase the heat to high, and boil down until the liquid is reduced to almost a glaze, about 4 minutes. Add the chicken stock and bourbon, boil until reduced by two thirds. Add the cream and simmer several minutes until the sauce thickens.
2 Whisk an egg and 2 Tbsp of water in a shallow baking dish. Sprinkle both sides of pork chops with salt and pepper. Dip chops into the flour, then egg mixture, then breadcrumbs, coating completely. Heat olive or grapeseed oil in a large skillet over medium-high heat. Add the pork chops and cook until brown, about 4 minutes per side. Turn the chops one more time, lower the heat to low, cover, and cook an additional 5 minutes. Alternatively you can put the chops in a pre-heated oven at 400°F for 5-8 more minutes.
3 When about to serve the pork, bring the sauce to a simmer and add the chopped basil to it. Season to taste with salt and freshly ground black pepper.
Serves 4.

Grilled Chicken (Amazing)
chicken:
grill it on high for the first 5 minutes, then always turn and turn until you see the inside is cooked thoroughly. You should cut slits when raw so the juice will show you how cooked it is.
i add, garlic (minced and powder), pepper, onion powder, tony cachere marvelous condiment
and that is all!
on both sides you add the condiments when it is grilling!

5 oz. evaporated milk
1 can chocolate ready to spread frosting
Mix the cake according to directions.Bake in a jelly roll pan at 350 degrees for 22-27 minutes.Cool.Mix the sugar, Crisco, butter, vanilla, and milk and beat for ten (10) minutes.Spread on the cooled cake.Microwave on high for one minute, the opened can of frosting.Pour over the filling.Refrigerate.

Fried Pickles
FRIED PICKLES
Recipe Courtesy of Emeril Lagasse
12 dill pickle spears
3 cups flour
2 egg yolks
3/4 to 1 cup beer
Pinch of baking powder Salt and pepper
Oil for frying
Preheat the fryer.
Season the pickles with Essence
{Essence, recipe below}.
Season 1 cup of flour with Essence. In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter. Dredge the spears in the seasoned flour. Dip the spears in the batter, letting the excess drip off and coating the spears completely. Gently lay the spears in the hot oil and fry until golden brown, about 3 to 4 minutes. Remove the spears from the oil and drain on a paper-lined plate. Season the spears with Essence. Serve the spears with ketchup

Peanut Butter Fudge with Mini Marshmallows
1 c. light brown sugar
1/4 tsp. salt
1/2 c. milk
1 c. miniature marshmallows
1/2 c. peanut butter
1- 1/2 tsp. vanilla
In a saucepan, combine sugars, salt and milk. Cook until temperature reaches 240° F. on a candy thermometer. Remove from heat and add marshmallows, peanut butter and vanilla. Beat with a wooden spoon several minutes until thick and creamy and gloss disappears. Spread in a buttered 8" square pan. Cut into squares. Makes about 48

Better than Sex Cake
So easy & delicious! I take this to many gatherings and it gets raving reviews.
Ingredients:
1 chocolate cake mix - any variety. I like dark chocolate but many prefer German Chocolate.
1 jar Butterscoth/caramel ice cream topping.
1 Cool Whip
2 Score candy bars or toffee chips.
Prepare & bake cake according to directions.
Immediately after removing cake from oven, poke holes in cake with end of wooden spoon and pour ice cream topping over cake and spread to cover, place in refrigerator to cool. After cake cools completely top with Cool Whip. Crush up Score candy bars and sprinkle on top. Keep refrigerated.
This cake may be made in several different varieties such as a white or strawberry cake mix with strawberry ice cream topping and fresh sliced strawberries on the whip cream or for those chocohaulics,
chocolate cake mix/chocolate ice cream topping/cool whip top with mini choc. chips or shaving from a choc. bar.

1 Box of Jello any flavor
1 Jar Apple Sauce
1 box Graham Crackers
1 Container Cool Whip
1. Mix box of jello with applesauce.
2. On a square stable surface place 3 graham crackers side by side
3. Laddle small amount of Jello mix on top.
4. Place 3 more graham crackers on top.
5. Laddle again.
6. Stack and laddle until all graham crackers and sauce are gone with graham crackers being on top.
7. Cover Cake in cool whip so that all sides and top are covered.
8. Chill in fridge over night.
9. Serve.
10. Optional: Top with sliced fruit to match your jello

Sweet Pea Salad
2 cans sweet peas, drained
3 hard boiled eggs
1/4 - 1/2 onion, chopped
2 TBS dill relish
1 TBS mayo
1 squirt mustard (not too much)
garlic powder
salt
pepper
First drain your sweet peas and pour them into a microwave safe bowl. Heat peas for about 6 minutes in microwave on high. Boil 3 eggs and let cool while peas are warming. Chop your onion up finely. When peas are warm, pour chopped onion, dill relish, and chopped cooled eggs in the bowl with peas. Pour rest of the ingredients in and mix well. Very tasty. Serve warm or cold.

BBQ Sandwiches
Here is some EASY BBQ sandwich ideas.
For BBQ Beef - put into crock pot in the morning any type of roasts that you have in the roasts you may have in the freezer. (If you thaw them out the night before they will cook alot more tender and it makes it easier to shred) For seasoning I just put pepper (salt if you like, I prefer not) and minced/chopped garlic on top. Add about 1/2 cup water. Let it cook on low for about 6-8 hrs. Take the roast out of the pot and you should be able to just shred the meat very easily into pieces. Remove water but don't throw away. Put the meat back into the pot. Add any BBQ sauce your family likes and some of the juice back into the pot until it is juicy enough for you.
BBQ Pork - This is what we had tonight. I used Pork Chops and Pork country style ribs. I then cooked them the same way as the BBQ Beef. My husband thought of this one today.
BBQ Chicken - Cook up some chicken, debone and then stir in the BBQ sauce and water/broth. This one could be really easy if you have already precooked chicken in the fridge/freezer.
Serve these on your favorite bun.

Shepherd's Pie
1 lb. lean ground beef
1 onion, chopped
2 cups frozen mixed vegetables
10 oz. can cream of mushroom soup with roasted garlic
3 cups refrigerated mashed potatoes
Preheat oven to 375 degrees. In heavy skillet cook ground beef and onion until beef is brown and onion is tender, stirring to break up meat, about 10 minutes. Drain well. Stir in vegetables and soup and cook until hot, about 4 minutes. Place in 9 inch pie plate. Spoon mashed potatoes over hot meat mixture. Bake at 375 degrees for 35-45 minutes until potatoes are golden brown and pie is bubbling. 6 servings

Macaroni Casserole
Macaroni Cassorle
1 lb ground beef: browned and drained
1 jar of speghetti sauce
2-3 cups elbow noodles (depending on cassorole dish)
Sliced American Cheese
Spices
Brown and Drain 1 lb of ground beef and boil noodles.
Mix ground beef and speghetti sauce together in mixing bowl.
Add spices (My favorite is 2 dashes of oregano and 1 dash of onion powder)
Combine cooked noodles with suace mixture
Line Cassorole dish with Sliced American Cheese
Pour into cassorole dish.
Top with slices of American Cheese.
Bake at 350 for about 45 minutes.
Serve
The Dish Should be hot and the Cheese should be Golden but not Crispy

it can be hamburger soup but we call it goulash it is so easy and can made in so many variety of ways first i brown a pound of ground beef while that is going on i fry me some chopped onions and bell peppers.drain the fat off the beef and add the onions and peppers. i like canned diced tomatoes and a can of mixed vegetables i season with Cajun spice or just salt and pepper maybe a cup or 2 of water and about a 2 cups of elbow macaroni if you want some juice add tomato juice .we eat with a pan of corn bread (we are in the deeeeeep south)and onion.very simple to double the recipe just add more meat and tomatoes or just tomato juice.i sure hope your family enjoys it as much as mine

2 lbs hamburger
1/2 white onion
15 oz. tomato sauce
16 oz picante sauce
30 oz Kuno's Chili Beans in Chili Sauce (hot or mild)
15 oz kidney beans, drained
3 Tbsp chili powder
OPTIONAL1 bay leaf
1 tsp salt
1/4 tsp pepper
Brown hamburger with onion. Dump everything in crock pot and cook. Keep lid tipped to steam floats out of pot and chili comes out thicker. Cook about 2-3 hours.

Crockpot Turtle Cake
Ingredients:
21 oz. pkg. brownie mix
1/2 cup water
1/4 cup vegetable oil
1 egg
1/2 cup semisweet chocolate chips
1/2 cup milk chocolate chips
1 cup chopped pecans
14 unwrapped caramels
Preparation:
Place a vegetable steamer or other low rack on the bottom of a 5-quart electric slow cooker.
Pour in 4 cups hot tap water and turn to high heat.
In a large bowl, combine the brownie mix, 1/2 cup water, oil, and egg and beat with a wooden spoon to mix well.
Stir in the chocolate chips and nuts.
Butter a 2 1/2-quart souffle dish that fits in the 5-quart slow cooker and dust with sugar.
Pour brownie mixture into the dish. Push the caramels partially into the batter, but do not push all the way into the brownie mixture.
Wrap the dish in a double thickness of foil. Tie with kitchen string, making a handle to make the dish easier to remove.
Place on the rack in the slow cooker.
Cover and cook on the high heat setting 4 1/2 hours. Remove the dish from the slow cooker, remove string and foil, and let cool 30 minutes.
Serve warm with whipped cream. 8 servings.

Butter Pecan Cake

1 Butter Pecan cake mix & ingredients for cake mix
1 pack chopped pecans
1 pack cream cheese
1 stick butter
1 box confectioners sugar
Preparation
Mix cake mix according to directions. Butter the pan and cover the sides and bottom with the chopped pecans. Heat cream cheese and butter in microwave to soften, then mix with confectioners sugar. Pour cake mix in pan, then pour the cream cheese mix in the middle of the cake just leaving the edges empty. Bake at time and temp for the cake recipe. You may have to cook a little longer if the middle is still really gooey. When it's done, let it cool and turn the cake upside down. You have a delicious Butter Pecan cake...but not just any Butter Pecan cake.

Pork Fried Rice
Pork: Pork Fried Rice
2 pounds pork chops3 bundles green onions3 carrots shredded2 pounds bacon1 cup cooked rice3/4 cup soy saucesalt and pepper
In a large skillet, cook pork until done lightly browned. Drain off fat and set aside.
Slice green onions into small pieces and shred the carrots with a coarse grater/shredder.
In a lage skillet, combine the meat and vegetables and about half of soy sauce.
Cover and simmer for about 30 minutes.
Meanwhile, fry bacon until crisp, add rice, salt, pepper, and remaining soy sauce.
Cover and simmer over low heat for 20 more minutes.

Beef Wellington
Beef: Beef Wellington (Friend's Grandmother's Recipe)
Ingredients
1 lb beef tenderloin fillet
Salt and pepper
Canola, grapeseed, or olive oil
1 lb mushrooms (we used half cremini, half shiitake)
4 thin slices ham (Parma ham if you can get it) or prosciutto
2 Tbsp yellow mustard (we used Coleman's Original English Mustard)
7 ounces puff pastry (needs 3 hours to defrost in refrigerator if using frozen)
2 egg yolks, beaten
1) Preheat oven to 400 degrees farenheit.
2) Heat a tablespoon or two of oil in a large pan on high heat. Season the fillet generously with salt and pepper. Sear the fillet in the pan on all sides until well browned (hint: do not move the fillet until it has had a chance to brown). Remove the fillet from the pan and let cool. Once cooled, brush the fillet on all sides with mustard.
3) Chop the mushrooms put them into a food processor and purée. Heat a large sauté pan on medium high heat. Scrape the mushroom purée into the pan and let cook down, all1) Preheat oven to 400°F.owing the mushrooms to release their moisture. When the moisture released by the mushrooms has boiled away, set aside the mushrooms to cool.
4) Roll out a large piece of plastic wrap. Lay out the slices of ham on the plastic wrap so that they overlap. Spread the mushroom mixture over the ham. Place the beef fillet in the middle, roll the mushroom and ham over the fillet, using the plastic wrap so that you do this tightly. Wrap up the beef fillet into a tight barrel shape, twisting the ends of the plastic wrap to secure. Refrigerate for 20 minutes
5) On a lightly floured surface, roll out the puff pastry sheet to a size that will wrap around the beef fillet. Unwrap the fillet from the plastic wrap and place in the middle of the pastry dough. Brush the edges of the pastry with the beaten eggs. Fold the pastry around the fillet, cutting off any excess at the ends (pastry that is more than 2 layers thick will not cook all the way, try to limit the overlap). Place on a small plate, seam side down, and brush beaten egg yolks all over the top. Chill for 5-10 minutes.
6) Place the pastry-wrapped fillet on a baking pan. Brush the exposed surface again with beaten eggs. Score the top of the pastry with a sharp knife, not going all the way through the pastry. Sprinkle the top with coarse salt. Bake for 25-35 minutes. The pastry should be nicely golden when done. (To ensure that your roast is medium rare, test with an instant read meat thermometer. Pull out at 125-130°F for medium rare.) Remove from oven and let rest for 10 minutes before slicing. Slice in 1-inch thick slices.

Breaded Pork ChopsBasically get thick cut chops w/bone. Prepare in separate bowls, flour, egg, and breadcrumbs. Season breadcrumbs with garlic powder, 2 tsp salt, pepper, paprika, a tsp, and mix those spices. Beat the eggs with the same ingredients and two tablespoons of milk. Next in a deep frying pan, heat, but do not scorch, three cups of your kind of oil, vegetable, canola, etc. Dip pork chops into flour, then beaten egg, and then breadcrumbs and set into hot oil to lightly brown on both sides. Preheat the oven to 350 degrees and place all browned chops on a rack inside a baking pan and bake for 45 minutes. Serve with rice pilaf and other vegies

1 1/4 Pounds boneless pork loin, pounded thin
1/2 cup all-purpose flour for coating
salt and pepper to taste
2 tablespoons butter
1/4 cup honey
1/4 cup chopped pecans
1. In a shallow dish, mix together flour, salt and pepper. Dredge pork chops in the flour mixture.
2. In a large skillet, melt butter over medium-high heat. Add chops, and brown on both sides. Transfer to a warm plate.
3. Mix honey and pecans into pan drippings. Heat thoroughly , stirring constantly. Pour over pork cutlets

Pork and Saurkraut
This is a recipe my mother came up with and is very yummy!
Ingredients
Pack of pork chops (boned or boneless)
Can of Saurkraut
Directions
Pour the saurkraut in a pan with the pork chops and cover with aluminum foil. Bake at 350 degrees until pork chops are done.
The saurkraut makes the chops moist and taste sooo good. Hope yall enjoy!
